Complete season breakdown

Every episode and bake

Season five gives each of its seven episodes one large bake, moving from selfie eclairs and illusion cakes through ice cream sandwiches, dessert impostors, popcorn sweets, party bites, and a rainbow-cake finale. This guide records every aired brief and adds one original home adaptation inspired by the ice cream sandwich challenge.

  1. Episode 1 · Personal introductions in pate a choux

    #Selfieclairs

The new bakers introduce themselves with assigned-flavor eclairs decorated from their own selfies, including a personal symbol and hashtag.

    • Challenge

      Selfie eclairs

Make eclairs in an assigned flavor, then use a selfie as the guide for decorations that communicate the baker's personality, including a descriptive decoration and hashtag.

  2. Episode 2 · Cake illusions

    Defying Gravity

The bakers construct cakes with an apparent floating or pouring element, then work ginger into the flavor profile.

    • Challenge

      Gravity-defying illusion cake

Build a cake with a convincing gravity-defying illusion, using supports and edible decoration to sell the effect, and add ginger as the required flavor twist.

  3. Episode 3 · Unexpected ice cream sandwiches

    Ice Screamers

Unexpected baked goods replace standard cookies in elaborate sandwiches filled with scratch-made ice cream and served with a complementary coulis.

    • Challenge

      Outrageous ice cream sandwiches

Turn an assigned baked item such as a waffle, blondie, doughnut, or cupcake into an ice cream sandwich, make the ice cream from scratch, and serve it with a complementary fruit coulis.

  4. Episode 4 · Italian dinner impostors

    Imposters Italiano

Dessert components must convincingly imitate one of three savory lasagna styles while still working as a coherent sweet dish.

    • Challenge

      Lasagna dessert impostor

Create a dessert that looks like an assigned meat lasagna, spinach-and-mushroom lasagna, or vegetable-pesto lasagna while keeping every component sweet.

  5. Episode 5 · Ballpark popcorn

    You're in the Ballpark

A favorite stadium snack becomes the focus of an oversized, highly decorated dessert challenge.

    • Big Bake

      Over-the-top popcorn dessert

Build an extravagant ballpark-inspired dessert that uses popcorn as a prominent flavor, texture, or decorative element.

  6. Episode 6 · Outdoor birthday party

The remaining bakers scale party desserts down to bite size and present the assortment as an outdoor celebration on miniature picnic tables.

    • Big Bake

Create an assortment of small birthday-party desserts suitable for an outdoor celebration and arrange the finished sweets on miniature picnic tables.

  7. Episode 7 · Rainbow finale

    Winning Colors

The finalists bake cakes with rainbow designs both inside and outside, then complete the scene with an edible pot of gold.

Ingredients

  • 170 g unsalted butter, melted and cooled
  • 200 g light brown sugar
  • 1 large egg plus 1 egg yolk
  • 2 teaspoons vanilla extract
  • 190 g all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 300 g strawberries, hulled and divided
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 240 ml cold heavy cream
  • 200 g sweetened condensed milk

Method

  1. Heat the oven to 175 C, or 160 C fan. Line a 23 cm square pan with baking paper.
  2. Whisk the melted butter with the brown sugar, egg, egg yolk, and vanilla. Fold in the flour, baking powder, and salt just until no dry streaks remain.
  3. Spread the batter evenly in the pan and bake for 22 to 24 minutes, until the center is set and the edges are lightly browned. Cool completely.
  4. Chop 200 g strawberries. Cook them with the granulated sugar and lemon juice for 6 to 8 minutes, crushing the fruit, until thickened. Cool, then reserve 60 g as sauce.
  5. Whip the cream to soft peaks. Fold in the condensed milk and the remaining cooked strawberries, then spread the mixture in a lined 20 cm square pan. Freeze for at least six hours.
  6. Cut the blondie slab into sixteen rectangles. Cut eight matching pieces of strawberry ice cream and sandwich each between two blondies.
  7. Freeze the assembled sandwiches for 30 minutes to firm them, then serve with the reserved strawberry sauce.

This is an original Baking Show Guide home adaptation inspired by the episode brief, not a contestant recipe or an official Food Network recipe.

The recipe uses no-churn ice cream to avoid requiring a machine.

Keep the blondies fully cooled before assembly so the ice cream does not melt.
