Neapolitan Swirl Blondies

View ingredients and method

Ingredients

  • 170 g unsalted butter, melted and cooled
  • 220 g light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 210 g all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 20 g unsweetened cocoa powder
  • 2 tablespoons whole milk
  • 80 g smooth strawberry jam
  • 25 g freeze-dried strawberries, crushed

Method

  1. Heat the oven to 175 C, or 160 C fan. Line a 20 cm square pan with baking paper, leaving an overhang.
  2. Whisk the melted butter with the brown sugar, eggs, and vanilla until smooth. Fold in the flour, baking powder, and salt.
  3. Transfer one quarter of the batter to a small bowl. Stir the cocoa and milk into that portion to make the chocolate batter.
  4. Spread the vanilla batter in the pan. Drop alternating spoonfuls of chocolate batter and strawberry jam over the surface, then draw a skewer through them a few times to marble without fully mixing.
  5. Scatter the crushed freeze-dried strawberries over the top and bake for 27 to 30 minutes, until the edges are set and the center has no wet batter.
  6. Cool completely in the pan, lift out by the paper, and cut into sixteen squares.

This is an original Baking Show Guide home adaptation inspired by the episode brief, not a contestant recipe or an official Food Network recipe.

Use a thick, smooth jam so the strawberry pockets do not make the center watery.

A few broad swirls keep the vanilla, chocolate, and strawberry flavors visually distinct.
